Several glasses of zinfandel and a huge salad sans dressing. I made a diet New Years resolution and I'm going to try & stick to it. The zinfandel's not bad! Tips, tips, tips? Anything?! We can't take alcohol or energy drinks out of the equation, as the alcohol keeps me somewhat sane and fuels my meager social life, and the monsters keep my mature arse on the ball! Some of my work friends & I planned on seeing the new STAR WARS movie a few days ago, but several bailed, and we postponed it. The problem being, in anticipation, I downed two Monster energy drinks. It happens. It's okay. I ended up listening to old Lionel Richie songs at three in the morning.

Try eating some old fashioned cooked oatmeal in the morning (not the instant stuff) - it's good for digestion.

Scalloped Cutlet and Potatoe Gratin

Not sure what is on the menu tonight - Andy is making some sort of soup (he used the chicken carcass last night, with leeks, etc.).

I was thinking maybe chicken thighs - I have a recipe called "The Thigh Who Loved Me" from a cook book called Eat, Shrink and Be Merry

Ingredients

  • 12 boneless skinless chicken thighs
    3/4 cup ketchup
    1/2 cup salsa
    1/4 cup honey
    1 tablespoon Dijon mustard
    1 teaspoon chili powder
    1/2 teaspoon ground cumin

Directions
1.ARRANGE chicken thighs in a single layer in a 9 x 13 inch baking dish.

2.WHISK together in a separate bowl the ketchup, salsa, honey, dijon mustard, chili powder and cumin until well blended.

3.POUR sauce over chicken; Turn pieces to coat both sides with the sauce.

4.BAKE uncovered at 400F for 45 minutes. (or you could do them in the slow cooker on high until they are cooked through) - probably 1 - 2 hours but check to make sure they don't get overcooked.

That sounds really good. I'm going to try this.
This is my favorite chicken thigh recipe. Not as healthy as baking, but I use very little oil, and almond milk in place of cream.

Asian fantasy (lol): miso soup with udon noodles and vegetables, cold sesame noodles, fried tofu, chicken potstickers, sauteed baby bok choi, sauteed vegetables. Sort of a mix and match meal that took 35 minutes to make the whole thing. It took longer to clean up than to cook and eat the darn thing! Delicious, though, and plenty left over for lunch tomorrow :)

And....we’re back. Ok my fiancée actually made it. Just wanted to see if anyone would read that far...lol

That is actually the correct term for marinara with ground meat. I sometimes get motivated to make meatballs but not very often any more.
After hearing him call eggplants aubergine, zucchini courgette etc. I don’t question him much anymore (just pulling your leg earlier).

I hope your sauce turned out good!
