Ok, this is kind of from pinterest, but I added my own flavah.
Mexican Chicken Enchilada Rice
Cook rice : I use a rice cooker and I made a bunch, but I will use it later in the week. For this recipe you'll need 2 cups of cooked and cooled rice.
Ingredients:
3 nice size boneless, skinless chicken breasts, cut into cubes
1 small onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced (I used the jarred kind)
a little oil (I used canola because olive gets too smoky when I'm cooking chicken in it for some reason, but the recipe called for olive oil)
Sautee all of the above until chicken is browned and the onions are translucent.
Add the rice, along with
1 bag of frozen corn, thawed
1 can of black beans (I did not drain mine)
3/4 cup red enchilada sauce
1/2 cup green enchilada sauce
1/2 tsp chili powder
1/4 tsp cumin
Kosher salt & fresh ground black pepper to taste
Simmer together about 15-20 mins, pretty low though, mine started sticking so I added a little chicken broth
Add as much shredded Mexican blend cheese as you like. I love cheese, but not everyone in this house loves it as much as me. You can always add more.
The recipe called for cilantro (I don't like cilantro) and oregano (I didn't have any)
I have to say, it was a hit. 3 out of 4 people like it. The one who didn't is too picky and doesn't have good taste.
It was fast, easy and I had all the ingredients without having to go to the store.
