Best Potato Skins Ever

Cook time 19 minutes

Need:

Potatoes

Vegetable oil

Green onions

Crunched up bacon (bits)

Shredded cheese

Basting brush and a spoon

Sour cream if you want

Each potato makes two skins


* Fry some bacon and crunch it up and set it aside. I put my bacon in a sandwich bag and crunch it up.

* Cut up the green onions (chives)

* Set the oven to broil.

* Slice the potatoes in half vertically… you know.. like a potato skin =P

* Hollow them out. I use a spoon.

* Place the hollowed out potatoes (outsides face up) on a baking sheet and baste the outsides with veg oil.

* Broil for 7 minutes.

* Remove from oven, turn over, baste the insides with veg oil. Place back in the oven, broil for seven more minutes.

* Take out of the oven;

* Fill with shredded cheese of your choice. I use sharp cheddar.

* Add bacon bits and the cut up green onions on top, place back in the oven and broil for five more minutes.

* Serve with sour cream and a good ole' spooky Stephen King movie. =D

* Or my second technique is going to TGI’s and paying 10 bucks for 5 skins. >_>

Thanks for the recipe - Do you use an already cooked potato for this? And what do you do with the potato flesh that you scoop out?
If you used raw potatoes you can shred what is left to make potato latkes - they are also good with sour cream

I use raw potatoes. I toss the flesh =P I hate wasting it so thanks! I tried to cook it once but it didn't come out too well. =/

I just baked six potatoes in the oven because of this thread - that is what I like about SKMB - jokes, discussions, educational stuff and.... Recipes! :encouragement:

No bacon in the house, but I have cheddar cheese I can shred on top and then maybe a bit of chives and some fake bacon bits for now.

Another thing you could do is:
1. Scoop out the filling, mash; then add salt, pepper and hot milk;
2. Beat until light then refill the shells.
3. Bake in a hot oven after sprinkling with paprika. :star:

I do this and call it Twice Baked Potatos. Garlic butter is good, too.

I have a lot of friends from the UK, and it's not the first time I have been asked that. Broil is when you put it in the oven, and instead of putting it on bake, like to bake brownies or something, broil is when its the top heating element only is going in the oven. 500 degrees F American I think. So like if you wanted to make garlic toast and brown the top, you would put it on broil instead of bake. Does that make sense? o_O

:) Thanks guys... we call it "grilling" here. (Top oven element = grill, bottom oven element = bake)

Same in Scotland. I tried to show or tell Andy what a "grilled cheese" was in Canada, when I was over there.

He made me a cheese sandwich, but grilled the bread under the broiler - ewww!

Flake - a grilled cheese sandwich is actually cooked on top of the stove in a frying pan. You put cheese in the middle, butter the outside of the bread, then cook it in the frying pan, flipping it over half way, until the cheese is all melty and the outside is nice and golden brown.

I actually do it in the grill and it turns out delish.

Oh hey! We do that here too... I just didn't know they were called grilled cheese sandwiches! :laugh: (the boys and I call them cheese toasties)

We also do them under the grill (broiler?) we just toast one side first, then add a little relish, sliced onion and grate some cheese over the top and grill again. (You put the toppings on the un-grilled side of the bread) Yummy, truly. :)

Basic Grilled Cheese Sandwich

Ingredients
  • 2 thick slices egg or multi-grain bread or your favourite sandwich bread
  • 2 tsp (10 mL) butter, preferably unsalted, at room temp
  • 1/2 tsp (2 mL) regular or Dijon mustard (optional)
  • Thinly sliced old cheddar or Swiss cheese, about 2 oz (60 g)
Instructions
  • Lay bread on counter. Butter one side of each slice. Turn over one slice and spread with mustard, if using, then cover with cheese. Place second slice of bread on top, butter-side up, to form a sandwich. Heat a small frying pan, preferably non-stick, over medium heat. When hot, add sandwich. Cook until deep golden brown on both sides and cheese starts to melt, about 2 minutes per side. Reduce heat to medium-low if sandwich browns before cheese starts to ooze. Using a spatula, remove sandwich from pan. Slice in half and serve immediately.
