That's not really all that too rare of a physical attribute, or as I would have personally considered it, at least at one time, a small blessing.
There has even been escape artists that have trained their hands to "fold" like Tery described, kinda like Geisha feet binding.
Of course if standard issue cuffs were set tight enough to the bone, like a cranky law dawg rat bastid did to me thirty years ago, so tight in fact, I've lost most all feeling on the outside of my right thumb, I would imagine some portion of hide and meat is going to slice off of the more truly inspired Houdini wannabees...ain't no bidness like showbidness

I answer: 1) Sounds like you had a good law suit against the boys in blue. However, as I've seen in my own life the boys and blue have a strong alliance with the hoods in black (judges) whcih would have made getting justice a tough proposition for you (unless you have a net worth of over about 10 million dollars--those folks when they go through the game of getting arrested ussually have the padded handcuffs put on them.) Or often have doubles used to play the game for them: (IE Lindsay Lohen and Paris Hilton) to dope the public into thinking that 'money does not buy justice.'
2) When Houdini performed his REAL escape acts, his main method of creating his escape was to have some sort of lock pick well hidden on him to use to get free by opeinng the handcuffs type restraints. At times (when many sets of handcuffs were put on him) he was able to slide his hands through the cuffs since some of these sets would be put so high up on his arms that they closed much bigger than the ones placed on his wrists. However this was sort of a 'bonus' situation--the methods Houdini and I'd imagine ALL handcuff escape artists basically relied on had to do with actually opening the handcuffs with a lock pick or similar device. This is true of both male and female (even very small wristed and hand ones) escape artists to this day.
3) With all I've said about Jessie's escape not working in the real world (and with the many replies of some anger to me), I will give Stephen King credit for one major thing: her being able to do so WAS justice. If Jessie had stayed handcuffed to the bed and had died in some horrible way (thirst or being killed by 'the Space Cowboy') this would have been AN INJUSTICE OF THE WORST TYPE. Not only would she had died at the hands of a totally cruddy husband--like many upper middle class men, he WAS truly 'self absorbed')--who Jessie basically just tried--putting her OWN SEXUAL DESIRES ASIDE--to please in all of their bondage role play, but in some ways her Dad--who not only did the truly horrible act of incest on her and then asked Jessie to excuse it--would have 'won out' as well. So even if it was not truly real, Jessie did make JUSTICE WIN OUT!! Plus was able to get a psychotic killer and body mangler put away as well. Further justice.
In a way at this time, this book and its 'final justice' made me think of the just concluded Miami Heat- Dallas Maverick NBA chamionship series result. The REAL result of that series was that the BETTER TEAM (the Heat) lost but the BETTER MEN (Mavericks) won. Though I think that Jessie beat FAR GREATER 'ODDS' (certainly a LOT GREATER than the nearly 2-1 odds the Maverciks were underdogs by when that series began) in both cases I feel that JUSTICE WON OUT!! Nice to see that happen now and then in our rather insane world.
