I've only just recently got in to King's novels but I am quite eager to start the Dark Tower series. My question is: Would reading The Gunslinger before 'Salem's Lot spoil the book for me in any way?

No,
Well, all things tie in someway/somehow in the SK universe-but since "The Lot" is not part of the DT series-read it first or last-but drive on through all 7 novels of the DT series, and above all ENJOY!
Thank you. Similarly, would reading The Drawing of the Three and The Waste Lands spoil anything of The Talisman for me? Haha. Perhaps I should just save The Dark Tower series for after I've read all of King's stand alone novels. Would that be the brightest thing to do?

Knowing either a bit or nothing about Father Callahan won't cause you any distress if you read "Lot" or "DT" before the other.
I didn't think that qualified as a spoiler.
I read Insomnia after I had finished the DT series, and re-read Hearts in Atlantis (esp Low Men In Yellow Coats) afterwards too. It all falls into place and second readings of related material are just that much more interesting after reading DT. It might not be a bad idea to read 'Salems Lot though, as Ms. Mod suggested.

I'm reading DT: Wolves, and thinking, when I'm thru with the DT series, I'll finally read 'Salem's Lot; Callahan's reminiscences make 'Salem's Lot sound very intriguing.
