Books similar to Eyes of the Dragon?
I really enjoyed this book, even though its not like most other Stephen King books - I would like to read some other fantasy books in a similar vain (almost like a fable I guess) by other authors (I've read The Wind Through the Keyhole and enjoyed the middle story similarly).

...The Dark Tower series...The Hobbit/LOTR....Anne McCaffery novels....
The Once and Future King (The Once and Future King, #1-4)
by T.H. White
Aesop's Fables
...just some ideas.....

I should have known that you've read The Once and Future King! My all time favorite book, just another thing to like about GNTLGNT!! I'd also suggest the Warlord Chronicles by Bernard Cornwell - it's another Arthurian telling, but very unique and with a similar fantasy/legend sort of feel.

Watership Down is another one that I'd recommend. The story itself is amazing, but within it there are tales that the rabbits tell of their own myths and legends, and those are some of my favorite parts which are much akin to The Wind Throught the Keyhole.

Ok, I've put Watership Down and TOAFK on my list for Santa. Can you recommend a specific book by Anne McCaffery?

Sounds like a big commitment. I'm not sure I'm man enough!
Re: Books similar to Eyes of the Dragon?
Try Piers Anthony's Xanth series of novels. They are very "punny" and clever and not like a lot of the other, more serious books people have recommended. I remember The Eyes of the Dragon as having some typical SK humor to it. The Xanth novels are a great blend of fantasy and humor. There are 35 of them (!) but you can start anywhere in the series and enjoy them; and you don't have to read them all since the story just keeps going on and on and on.... If you want to start with first though, it is called A Spell for Chameleon. They do get progressively "punnier" as the series goes on, as you can tell from the titles.
